Data suggests food allergies are common and have been increasing in prevalence in the last 2 to 3 decades. Therefore, health care professionals should have an understanding of how to administer care to patients suffering from food allergies. This CEU reviews the epidemiology, pathogenesis, diagnosis, prevention, and management of patients suffering from food allergies in order to increase awareness and improve upon patient care.  

CEU Course Objectives

  1. Examine the epidemiology, pathogenesis, diagnosis, prevention, and management of patients suffering from food allergies.
  2. Identify the U.S. Food and Drug Administration's (FDA) role in food allergy management.
  3. Review 'safe food handling' techniques.
